The Platform

Birchmont holds the franchise licence, hires the teams, carries the P&L, and answers to the franchisor for brand standards in every unit we run. There is no third-party management company between us and the guest.

That matters for how we grow. We add locations when the last one is stable, the management bench is deep enough to absorb another, and the site clears a conservative underwriting case. We would rather run a smaller number of strong units than report a bigger store count.

We work in quick-service and fast-casual formats: proven systems, disciplined operating models, and franchisors who hold their network to a standard. Our growth comes from area development, new builds and conversions, and the acquisition of existing units from operators ready to exit.

What we run, end to end.

Everything from the site search to the Friday night close sits inside the company.

Site selection & development

Trade area analysis, site search, lease or land acquisition, permitting, and build-out management through to opening day — supported in-house by our real estate platform.

People & management bench

Recruiting, certification, and retention of general managers and shift leads. Our constraint on growth is management depth, so we build the bench before we sign the next deal.

Unit economics & reporting

Weekly labour, food cost, waste, and throughput reporting on every location, reviewed against plan. Problems surface in days, not at quarter end.

Brand standards & compliance

Food safety, franchisor audits, marketing participation, and remodel obligations treated as commitments we made, not costs to defer.

Market & brand fit

We assess the trade area and the franchise system together. A strong brand in the wrong town is still a bad deal, and so is a weak system in a great location.

Underwriting

Every site is modelled to a conservative case: realistic sales, current labour rates, and full occupancy cost. If it only works on the optimistic case, it does not get built.

Control the site

We buy the property where we can and lease where we cannot. Owning the real estate is the default, not the exception — it takes the largest uncontrollable cost off the table.

Build & staff

Construction management to franchisor specification, running in parallel with hiring and certifying the management team so the store opens with leadership already in place.

Operate and stabilise

Principals are in the building through the opening period. The unit has to hit its operating targets and hold them before the next site moves forward.
